Mediterranean-Inspired Halloumi Avocado Toast

If you love avocado toast but are bored of the same basic version, this Mediterranean-Inspired Halloumi Avocado Toast is about to become your new favorite.


As much as I love a simple avocado toast, sometimes you need something that feels more exciting, more flavorful, and a little more special. This version is inspired by the flavors I grew up with — the creaminess of tahini, the savory bite of halloumi, and the warmth of za’atar. Every bite brings me right back to my summers spent in Syria.


It’s quick, satisfying, packed with flavor, and comes together in under 10 minutes, making it perfect for breakfast, lunch, or even a light dinner.

This recipe is vegetarian.

Ingredients

1 slice sourdough bread, toasted

4 slices halloumi, seared

½ avocado, mashed

Lemon pepper

Juice of ½ lemon

2 radishes, thinly sliced

½ cucumber, thinly sliced

Tahini, for drizzling

Za’atar, to taste

Flaky salt to taste

Instructions:

  1. Toast the bread: Toast sourdough until golden and crisp.

  2. Prepare the avocado: In a small bowl, mash ½ avocado with lemon pepper.

  3. Slice the veggies: Thinly slice the radish and cucumber and set aside. Feel free to use a mandolin.

  4. Sear halloumi: In a pan over medium heat, sear the halloumi slices for 1–2 minutes per side until golden.

  5. Assemble toast: Spread the mashed avocado evenly over the toasted bread. Layer the halloumi, radish, and cucumber slices on top. Drizzle with tahini, sprinkle generously with za’atar, and season with a dash flaky salt. - reminder that halloumi is naturally salty. Enjoy fresh while the toast is warm and the halloumi is crispy.

  1. Can I make this vegan?: Yes! Simply swap the halloumi for:

    • Pan-seared tofu

    • Crispy chickpeas

  2. Is this recipe gut-friendly? Yes — this toast includes:

    • Healthy fats (avocado, tahini)

    • Fiber (radish/cucumber + sourdough)

    • Protein (halloumi)

    It’s balanced, satisfying, and easy on digestion for most people. If you’re sensitive, go lighter on the raw veggies.

  3. Can I make this ahead of time?: This recipe is best fresh, but you can slice veggies ahead of time and mash avocado right before eating to prevent browning.

  4. What can I use instead of halloumi? Great alternatives include:

    1. Fried or soft-boiled egg

    2. Feta cheese

    3. Tofu or tempeh

  5. How can I make it more filling?: You can -

    • Add eggs

    • Use two slices of bread

    • Mash chickpeas or edamame into the avocado for more fiber

    • Serve with a side salad or fruit


Recipe Notes:

  1. Bread choice matters: Sourdough works best here because it’s sturdy, slightly tangy, and easier to digest than most breads. If you don’t have sourdough, a thick-cut whole grain or seeded bread works well too.

  2. Halloumi tip: Make sure your pan is hot before adding the halloumi. This helps it brown nicely without sticking and gives you that golden, slightly crispy exterior.

  3. Slice veggies thinly: Thin radish and cucumber slices add crunch without overpowering the toast.

  4.  Best enjoyed fresh: This toast is best eaten right after assembling while the bread is warm and the halloumi is freshly seared.
