Baked Chicken Kabobs:
3 chicken breasts
1 TBSP Greek yogurt or plain yogurt
1 ½ TBSPs mild pepper paste
1 TBSP tomato paste
1 TSP kosher salt
½ TSP freshly ground black pepper
4 minced garlic cloves
2 TBSPS extra virgin olive oil
Juice of ½ lemon
3 tomatoes
3 pearl onions
Fattoush Salad:
1 bunch of romaine lettuce
2 tomatoes
¼ white cabbage
2 cucumbers
1 radish
¼ cup of chopped parsley
3 green onions
Fresh mint to garnish
Extra virgin olive oil
2 lemons
Salt
Sumac
Optional: pita bread
Saffron Rice:
1 cup of basmati rice
2 TBSPS extra virgin olive oil
¼ TSP of saffron
