This is a new and unique way to enjoy your eggs in the morning while obtaining the nutrients your body needs from breakfast. It took me 10 minutes to prep and every bite was better than the next. Besides prepping the cherry tomatoes and avocado, this is going to be a mess free breakfast.

2 Stonefire mini naan
Mt.Vikos Red Pepper and Feta Spread*
2 eggs
6 cherry tomatoes, sliced in halves
Extra virgin olive oil
Salt & freshly cracked black pepper
2 eggs
Arugula (fresh)
2 tbsp feta crumbles (I recommend Olympiana)
½ avocado, thinly sliced
*If you do not have access to buying this spread, please do not fret - you can use harissa or any other red pepper spread on the market. Trader Joe's makes some as well!

2. Prep naan: preheat oven to 400F. grab a baking sheet and place the two naan on it. Layer on the red pepper spread evenly onto each. Gently crack an egg onto each naan, ensure that it's secure in the middle of the naan so it doesn't drizzle over. Add cherry tomatoes around the egg. Drizzle on olive oil. Season with salt and black pepper to taste. Bake in oven until eggs are cooked to your liking 10-15 minutes.
3. Serve: once naan are baked to your liking, gently remove and add to a plate. Add arugula, avocado slices, and feta crumbles over the tacos. Salt if you'd like. Enjoy!
