Easy No-Bake Gut Healthy Chocolate Barks

POV: you may love your partner, but you don't enjoy baking, so instead, you make them these Easy No-Bake Gut Healthy Chocolate Barks for this upcoming Valentine's Day.


Let's be real, not all of us are meant to enjoy baking, I get that (I'm one of them). But here's the truth -- we're all deserving of a good sweet treat, made at the comfort of our own home. Chocolate barks are incredibly easy to make and their mess free. I've made different concoctions over the years, but these two are so far my favorite. On the left side is my Strawberry Chia Almond Chocolate Bark and on the right side is my Blueberry Tahini Walnut Chocolate Bark. While both of these are gut-healthy, I purposely created them to be brain-healthy too.

  • Chia seeds are loaded with omega 3 fatty acids, which have been linked to improving cognitive function.

  • Daily blueberry intake has been proven to improve short-term memory and long-term memory.

  • Tahini is made of sesame seeds, which contain omega 3 fatty acids and magnesium. Both of these nutrients have been linked to improving cognitive function and our mental well being.

  • Walnuts are shaped like a brain for a reason! A handful of walnuts a day has been linked to reducing cognitive decline and reducing our risk of dementia.


As you can see, for this Valentine's Day, I provided you with two chocolate bark recipes that not only are delicious and easy to make for your loved ones, but two recipes that can help your loved ones live better too.


You can choose to make these chocolate bark recipes on a baking sheet lined with parchment paper, or you can buy these chocolate molds I bought off of Amazon, it's up to you! You're going to need chocolate chips (dairy free if you prefer), strawberries, blueberries, walnuts, chia seeds, tahini, flaky salt, and sliced almonds. Let's get to it.


Yields: 2 chocolate barks

Portion: up to you, who am I to say...


Prep time: 10 minutes

Total time: until frozen


This recipe is gluten free and vegan (if you use vegan chocolate chips)

Ingredients:


Strawberry Chia Almond Chocolate Bark

1 cup semi sweet chocolate chips

1 tbsp coconut oil

5 finely sliced strawberries

1-2 tbsp sliced almonds

½ tbsp chia seeds


Blueberry Tahini Walnut Chocolate Bark

1 cup semi sweet chocolate chips

1 tbsp coconut oil

â…“ cup blueberries

Drizzle of tahini

¼ cup walnuts, crushed

Pinch of flaky salt

Instructions:


1. Prep chocolate: Grab two chocolate molds, one for the Strawberry Chia Almond Bark and one for the Blueberry Tahini Walnut Bark. In a small mixing bowl, pour in 2 cups semi sweet chocolate chips and 2 tbsp coconut oil (you can do it together for both barks or separately). Microwave until the chips fully melt. Stir the coconut oil in well with the chips to ensure they've fully melted.


2. Prep barks: Pour in ½ of the melted chocolate into one mold and ½ of the melted chocolate into the other mold.


3. Add fillings: In one mold, add in strawberries, almonds, and chia seeds. Distribute the fillings throughout the chocolate. In the other mold, add in the blueberries, walnuts, and tahini drizzle. Add a pinch of flaky salt.

4. Freeze: freeze the barks for 30 minutes or until the chocolate is solid.


5. Serve: once the chocolate is frozen, gently take it out of the freezer and gently slice the break the bark. Enjoy with your partner, friend, or keep them in the freezer for later.
