Easy Vegetarian Breakfast Tacos

Tacos shouldn't be left for just dinner, these are my Easy Vegetarian Breakfast Tacos and they are the perfect balanced meal to start your day off with.


Yields: 1

Portion: 3 tacos


Prep time: 10 minutes

Total time: 15 minutes


This recipe is dairy free and vegetarian.

 

Ingredients:

3 eggs (egg whites of 1)

Salt

1 tbsp extra virgin olive oil

½ avocado

Lemon pepper

3 mini tortillas

Arugula

3 tbsp pico de gallo

Fresh cilantro to garnish

Hot sauce to garnish

 

Instructions:

1. Eggs: crack 3 eggs into a bowl. Whisk and add salt. Whisk again. Place a small frying pan on medium high heat. Drizzle in olive oil and once you can smell it, pour in the eggs. Use a rubber spatula and move the eggs towards the center multiple times until cooked.

2. Avocado: have avocado mashed into a bowl and season with salt & lemon pepper. Grab a plate and place 3 tortillas onto it. Distribute mashed avocado onto


3. Build: layer on arugula. Split the eggs into three and layer onto tortilla. Add a tbsp of pico de gallo onto each tortilla. Garnish with fresh cilantro & hot sauce. Enjoy!
