This December, I wanted to do something fun for you this holiday season that not only keeps you eating good, but feeling good too.

So, I created a Fiber Advent Calendar that you can download and follow for the next 25 days…


My goal with this is to have you try to incorporate a different source of fiber each day. From fruits, vegetables, nuts, seeds, legumes, and grains — this is your ultimate way to learn that eating different sources of fiber each day is possible AND easy.


Each day of the month I’ll also be posting a recipe on my social media using the fiber source of the day. This way you can see how your favorite gut health RD would actually use these ingredients in real life — simple, flavorful, and totally doable even during the busiest time of year.


My hope is that by the end of these 25 days, you’ll not only hit your fiber goals without overthinking it, but you’ll also feel more confident, creative, and inspired in the kitchen.


Whether you’re trying to support digestion, balance blood sugar, stay fuller longer, or just feel GOOD in your body through the holidays, this Fiber Advent Calendar is going to be your daily dose of nourishment, but in a festive way. Did I mention that most of the fiber sources I chose are seasonal to the month of December?


*A reminder: When you eat foods that are naturally in season, they are not only going to be fresher and tastier, but more nutritious than if they weren’t in season. We want to eat foods that aren’t traveling too long to get to us, that’s how they lose their taste and freshness. Studies show that produce picked at their peak of ripeness are going to contain more nutrients when allowed to ripen on their parent plant.

Recipe #2: High Fiber Turkey Apple Cheddar Sandwich


Tell me if I’m wrong, but I genuinely believe sandwiches can be fitting for all year round, it’s just important that your sandwich fits to what’s in season that month for produce. This month, apples are in season, which makes them a great sweet and crunchy addition to any sandwich. I made a High Fiber Turkey Apple Cheddar Sandwich, that can be whipped up in less than 10 minutes. It gives you protein, fiber, fats — everything your body needs in a balanced meal.


The sweetness of the apple paired with the savory flavor of the kale and tanginess of the cheddar, makes for the perfect winter sandwich.

Prep time: 5-7 minutes

Total time: 10 minutes


Ingredients:


2 slices sourdough, toasted

½ cup kale, finely chopped

½ avocado, thinly sliced

Drizzle extra virgin olive oil

Drizzle of lemon juice

Pinch of salt

½ Honeycrisp apple, thinly sliced (I used a mandolin, but be careful if you’re using one) 

4 thin slices sharp cheddar

4 slices oven roasted turkey (I use Applegate)

1–2 tsp Honey-Dijon mustard

Lemon pepper to taste

Instructions:

  1. Toast sourdough (optional): Toast both slices until lightly golden.

  2. Prep the kale: Place kale in a small bowl, add a drizzle of olive oil and lemon juice. Add a pinch of salt. Gently massage for 10–15 seconds until slightly softened. Set aside.

  3. Prep apple, avocado, cheddar: have apple, avocado, and cheddar thinly sliced. Set aside.

  4. Layer the sandwich: spread on honey-dijon mustard onto one toast. Add on avocado. Add the sharp cheddar slices.Add the roasted turkey. Add the kale. Layer the thin Honeycrisp apple slices on top.

  5. Finish and serve: Top with the second slice of sourdough. Slice in half if you like and serve immediately. Enjoy the leftover apple on the side! econd slice of sourdough. Slice in half if you like and serve immediately.
