Holiday Baked Brie with Pecans

This December, I wanted to do something fun for you this holiday season that not only keeps you eating good, but feeling good too.


So, I created a Fiber Advent Calendar that you can download and follow for the next 25 days…

My goal with this is to have you try to incorporate a different source of fiber each day. From fruits, vegetables, nuts, seeds, legumes, and grains — this is your ultimate way to learn that eating different sources of fiber each day is possible AND easy.


Each day of the month I’ll also be posting a recipe on my social media using the fiber source of the day. This way you can see how your favorite gut health RD would actually use these ingredients in real life — simple, flavorful, and totally doable even during the busiest time of year.


My hope is that by the end of these 25 days, you’ll not only hit your fiber goals without overthinking it, but you’ll also feel more confident, creative, and inspired in the kitchen.


Whether you’re trying to support digestion, balance blood sugar, stay fuller longer, or just feel GOOD in your body through the holidays, this Fiber Advent Calendar is going to be your daily dose of nourishment, but in a festive way. Did I mention that most of the fiber sources I chose are seasonal to the month of December?


*A reminder: When you eat foods that are naturally in season, they are not only going to be fresher and tastier, but more nutritious than if they weren’t in season. We want to eat foods that aren’t traveling too long to get to us, that’s how they lose their taste and freshness. Studies show that produce picked at their peak of ripeness are going to contain more nutrients when allowed to ripen on their parent plant.

Recipe #12: Holiday Baked Brie with Pecans


We're learning how to add more fiber into our diets, but it's also the holiday season -- so who am I to be a scrooge and restrict you of some delicious holiday recipes. This is my Baked Brie with Pecans and it's going to be the perfect holiday appetizer for you this season. It looks beautiful and intricate when served, but you'll secretly know it only took you 10 minutes to make.


TO those of you who are wondering if pecans are a source of fiber or not -- yes they are! 1 oz of whole pecans is roughly 3 grams of fiber. So, you'll be reaping the nutrition benefits of the pecans, while enjoying a flavorful holiday appetizer.


Portion: 4 people


Prep time: 10 minutes

Cook time: 15 minutes

Total time: 30 minutes


This recipe is gluten free and vegetarian.

Ingredients:

1 round brie (8 oz)

Drizzle of honey

½ cup pecans, roughly chopped

2 tbsp coconut oil or butter

½ tsp vanilla extract

1 tbsp brown sugar

¼ - ½ tsp cinnamon


Garnish: (all optional)

Dried/fresh thyme

Pinch of flaky salt

Pomegranate seeds


Crackers, baguette, or apple slices for serving

Instructions:

  1. Preheat: preheat oven to 350°F.

  2. Prep brie: have the brie in the fridge until the second you want to put it into the oven. Cold brie melts more slowly, ensuring a gooey center. Gently slice the top layer of the brie off OR crosshatch the top. Place the brie in either a small ceramic dish, a brie baker, or a cast iron mini skillet. I linked my brie baker, it's from Crate & Barrel. Pour on honey. Bake for 10-15 minutes.

  3. Prep pecans: In a small pan on medium heat, melt coconut oil. Add chopped pecans, and toast for 2 minutes until fragrant. Stir in vanilla extract, cinnamon, and brown sugar.

  4. Assemble: Gently remove brie from oven and allow to rest for 2–3 minutes before cutting. Pour over pecan mixture. You want to enjoy the brie as fresh as possible.

  5. Garnish: garnish with dried/fresh thyme, flaky salt, and pomegranate seeds. Serve with crackers or sliced baguette and enjoy with good company!
