Summer Kiwi Refresher

This is my Summer Kiwi Refresher and it is going to be hit at all of your upcoming gatherings this season. I don't know about you but I feel as though we've been all under a global heat wave this summer. In order to combat these hot, summer days, I want to make sure (as your go-to gut health dietitian) that you are physically prepared. So, I created this Summer Kiwi Refresher that will not only properly hydrate you, but also naturally support your bowel movements. There are two main ingredients within the refresher that help support your digestive health -- kiwis and coconut water. Kiwis are natural sources of fiber, which is a key nutrient that supports bowel regularity. Coconut water isn't a source of fiber, but it is a naturally occuring source of electrolytes, which are important for fluid balance. When you have fiber and electrolytes together -- you've won the gut jackpot.


You're going to need kiwis, lemon, agave, coconut water, and club soda. I'd like to note that if you do opt for SunGold kiwis, they are naturally sweeter than green kiwis. So, you likely won't need to overdo it with the added sweetener. If you like a more citrus-forward drink, increase the lemon juice to a whole lemon. As for the sweetener, I used agave but you can feel free to use honey, maple syrup, or brown sugar. My recipes are always here for you to use as inspiration. Let's get to the recipe!


Yields: 1

Prep time: 5 minutes

Total time: 8 minutes


This recipe is dairy free, gluten free, and vegan. If you use honey, the recipe will not be considered vegan.

Ingredients:

3 kiwis, grated (SunGold or regular kiwi)

Juice of ½ lemon

1 tbsp agave syrup (adjust to your liking)

1 ½ cups coconut water

1 cup club soda

Plenty of ice

Optional addition: fresh mint

Instructions:

  1. Grate the kiwis, add to a bowl. Add lemon juice and agave. Mix well. Taste test for more or less sweetener. Adjust. 

  2. Add mixture to a pitcher. Pour in the coconut water followed by the club soda or sparkling water. Fill the pitcher with ice

  3. Gently stir to combine without losing too much fizz.

  4. Pour into separate glasses. Garnish with fresh mint or a kiwi slice and enjoy immediately.
