Turkey Kale Sandwich with Marinated Red Onion

Unfortunately, it's still winter here in Boston, it just snowed like 10 inches, but I don't care, it's always sandwich season. This is my Turkey Kale Sandwich with Marinated Red Onion. I don't know about you, but turkey sandwiches are by far my favorite kind of sandwiches, and this may be one I remake several times. I love this take on a typical turkey sandwich because I'm pretty sure no regular deli would sell you a turkey sandwich with kale in it. Imagine going into a deli and asking them for kale on your sandwich, they'd tell you to "get the f**k outta hereee". But, since you're at the comfort of your own home, you're allowed to build your sandwiches the way you want.


This is not only a delicious sandwich recipe, but an easy one to make. The only two steps that will need extra care and love is massaging the kale and marinated the red onion. If you're thinking about making this recipe, make sure to marinate the onion 30 minutes prior to making the sandwich. You want the onions to be fully submerged in the olive oil and lemon juice to ensure you don't get that pungent red onion flavor, but more of a sweet one. As for massaging the kale, you just need to drizzle on olive oil, lemon, and salt.


You know that I'm a gut health dietitian so I try to make most of my recipes gut friendly and balanced. For gut support, I added in the kale, avocado, and red onion. But for balance, you have turkey as your source of protein, sourdough bread as your source of carbs, and mayo for your source of fun. I used Hellmann's mayo for this recipe, but you can feel free to use any brand you like more, I know some avocado oil based mayos like Chosen Mayo is delicious.

Ingredients:


Marinated Red Onion

1 large red onion, thinly sliced

1 tbsp extra virgin olive oil

½ tbsp sumac (adjust to taste)

1/4 tsp salt (adjust to taste)


Kale

1 tbsp extra virgin olive oil

Juice of ½ lemon

Dash of salt


Sliced sharp white cheddar cheese (adjust to taste)

2 slices sourdough bread

2 tbsp mayo of choice (adjust to taste)

½ avocado, thinly sliced

3 slices of deli turkey of choice (I love Applegate Farms since it's nitrite/nitrate free)


Customizing Your Turkey Kale Sandwich with Marinated Red Onion

This recipe is easily customizable to meet your dietary needs. Here are a few ideas:

  • Gluten free: opt for a gluten free tortilla instead of a flour tortilla.

  • Dairy free: use a dairy free cheddar cheese instead or opt out of it.

  • Vegetarian/Vegan: if you enjoy the flavors of this recipe but are following a vegetarian or vegan lifestyle, feel free to opt out of the turkey and use a protein source you enjoy or make a simple turkey-free sandwich.

Instructions:

  1. Marinate the red onion: Begin by thinly slicing the red onion and placing it in a serving bowl. Drizzle olive oil over the onions, followed by sumac and a pinch of salt. Toss the onions to ensure they’re evenly coated. Refrigerate the onions for at least 30 minutes to allow the flavors to meld.


  2. Prepare the kale: In a small bowl, add the chopped kale. Drizzle olive oil and fresh lemon juice over the kale, then season with a dash of salt. Massage the kale with your hands until the leaves soften and the crunch subsides. This step helps tenderize the kale and enhances the flavor.


  3. Assemble the turkey sandwich: Toast two slices of sourdough bread to your desired level of crispness. Spread a layer of mayonnaise on each slice of bread. Layer on cheddar cheese and avocado. Add the freshly massaged kale and top with turkey slices. Spoon on your desired amount of marinated onions (around ¼ cup is ideal, with extra onions saved for later use).


  4. Serve: Slice the sandwich in half and enjoy!



Recipe Notes:

  • Don't like turkey: feel free to use deli chicken instead or freshly grilled chicken breast.

  • Switch out greens: if you don't like kale, please opt for arugula or mixed greens instead.
