Chocolate Covered Strawberries

This is my take on Chocolate Covered Strawberries, but in candy-like form. Instead of covering the entire strawberry in chocolate and making a mess with each bite, this is a way to get a clean bite of chocolate and strawberry, with some health benefits as well. I added chia seeds into each for some antioxidants and some pistachios on top for a source of healthy fats.


I'm not one that loves to bake, but these were incredibly easy to make, mess-free, and bake-free. You only need six ingredients and if you're having people over, it can be the easiest dessert to whip up in no time. My biggest tip though is to keep the bark frozen to ensure the strawberries don't become soggy. The bark is most enjoyed served cold!

Total time: until frozen


This recipe is dairy free, gluten free, and vegan (if you use vegan chocolate chips).

 

Ingredients:

1-2 cups semi sweet chocolate chips

1-2 tbsp coconut oil

10-12 strawberries, thinly sliced

¼ cup chia seeds

2 tbsp crushed pistachios (or more)

 

Instructions:


1. Prep strawberries: wash the strawberries properly and slice thinly. Set aside.


2. Prep the chocolate: pour the chocolate chips into a bowl with coconut oil and microwave until the chips fully melt. Stir the coconut oil in well with the chips to ensure they've fully melted.


3. Add chocolate: in a muffin tray, add in baking cups or parchment paper. Pour in chocolate to cover the base of the cup.


4. Add strawberries and rest: now, add 2-3 slices of strawberries per cup. Sprinkle in chia seeds to your liking in each cup. Drizzle on chocolate to cover up the strawberry slices. Garnish with crushed pistachios.


5. Freeze: freeze the bark candies until the chocolate is solid. I allowed it to sit overnight.


6. Serve: once the chocolate is frozen, gently take it out of the freezer and Enjoy!
