Fig Chia Jam Stuffed Dates

I posted Week 5 of my Sunday Seasonal series and it included this delicious Easy Fig Chia Jam recipe. It was my way of showing you how easy it is to incorporate more figs into your daily routine, since they’re in season and gut healthy.
Today, I wanted to show you a fun and creative way you can put that fig chia jam to work. These are my Fig Chia Jam Stuffed Dates.
I wanted to make you a dessert that not only satisfied your sweet tooth, but fed your gut at the same time. The dates give you a naturally sweet, fiber-rich base, while the figs and chia seeds add even more fiber. While you are able to enjoy the dates as is, I did add some tahini and flaky salt to give you a sweet and salty combo.
This is proof that you can support your gut and enjoy the foods you love at the same time. It’s all about getting creative in the kitchen. I’m your go-to gut health RD, and this is how I like to make gut health actually fit into your real life !!
Yields: 12 dates
Prep time: 10 minutes (post making fig chia jam already)
Total time: 40 minutes
This recipe is vegan.
Ingredients:
12 Medjool dates, pitted
Fig chia jam
Tahini
Flaky sea salt
Instructions:
Prep dates: Slice each date lengthwise and remove the pit, keeping the date mostly intact.
Fill: Fill with approximately 1 tsp of fig chia jam into each date. Repeat.
Garnish: Drizzle with tahini and flaky salt.
Freeze: Freeze dates for up to an hour if you would like.
Enjoy: Once you’re ready to eat them, take them out of the freezer, plate them, and enjoy!
