Mediterranean-Inspired Huevos Rancheros



A Healthy Twist on a Classic Mexican Breakfast

I personally want to thank the Mexican community for blessing the world with Huevos Rancheros. This is a very popular Mexican breakfast that simply translates to "rancher's eggs" and it hits THE spot every time. Huevos Rancheros usually consist of fried eggs, tortillas, refried beans, pico de gallo, avocado, and cilantro. Today, I present to you my Mediterranean Inspired Hueveos Rancheros. This is a new and unique way to enjoy your eggs in the morning while obtaining the nutrients your body needs from breakfast. It took me 10 minutes to make and every bite was better than the next. All you have to do chop some arugula and you won't have to dirty too many dishes.

With the spice of the harissa, crunch of the taco, saltiness of the feta, you get a burst of flavor in each bite. Plus, it's a nutritious way to start the day. You have protein from the eggs, fiber from the avocado and arugula, healthy fats from the avocado, and carbs from the tortillas. This recipe is customizable too, it can suit your dietary preferences: it’s dairy-free, gluten-free, and vegan!

This recipe is vegetarian.

 

Ingredients:

1 tbsp extra virgin olive oil

2 mini soft tortillas

¼ cup mild harissa

2 eggs

Salt to taste

Arugula (fresh)

2 tbsp feta crumbles (I recommend Olympiana)

½ avocado, thinly sliced

¼ tsp zaatar

 

Tips for Customizing Your Mediterranean Huevos Rancheros:

  • Make it spicier: Add more harissa or even a few dashes of hot sauce to add some heat. I love Cholula.

  • Add more veggies: I made the simplest version of these tacos, feel free to toss in some sautéed spinach instead of the arugula, mushrooms, onion, or bell peppers for extra veggie sources.

  • Dairy-free option: Skip the feta and substitute with a dairy-free cheese or leave it out if you prefer a dairy-free meal.

  • Try a GF option: Feel free to use a GF tortilla option if you would like to. Some brands I recommend are Mission, Siete, or B Free.

Instructions:

1. Prep ingredients: have harissa, eggs, arugula, feta crumbles, and avocado by your side and prepped.


2. Warm tortillas: grab the tortillas and a medium sized frying pan. Drizzle in olive oil or use spray to coat the plan. Add in the two tortillas on medium heat. Once you can smell the olive oil, add on equal amounts of harissa onto each tortilla and spread to all corners of tortilla. Turn the heat down to medium low, cover the pan, and allow to crisp up for 2 minutes.


3. Add eggs: the tortillas should have crisped up without browning, because we still need to cook the eggs. Crack an egg onto each tortilla. Salt to taste. Cover pan and allow eggs to cook to your liking without burning the bottom of the tortillas.


4. Serve: once the eggs are to your liking, turn the heat off and use a spatula to gently move the taco eggs onto a plate. Add arugula, avocado slices, and feta crumbles over the tacos. Season with zaatar. Salt if you'd like. Enjoy!


Recipe Notes:

  • Change the tortilla: use whole wheat tortillas over plain flour tortillas if you'd like. If you need to opt for a GF option please try the brands I recommended above.

  • Add different toppings: Use marinated sumac onions, fresh cherry tomatoes, or sliced cucumbers on the sides if you would like.

  • Use a different cheese: If you’re not dairy-free, you can opt for a different cheese than feta like halloumi, labneh, or goat cheese.

  1. Can I prep this dish ahead of time?: Even though these huevos rancheros  best enjoyed fresh, you can prep the tortillas, harissa, and toppings ahead of time. When you want to eat you can heat the tortillas and cook the eggs.

  2. What can I serve with Mediterranean Huevos Rancheros?: This is completely up to you and what theme you have going on around the dish. The dish is filling on its own, but you can pair it with some fruit, light green salad, or seared halloumi cheese.
